Josophan's is the vision of Jodie Van Der Velden, with an aim to create extraordinary fine chocolates, without compromise.
Jodie founded Josophan’s in 2005, in the tiny Café Madeleine, and as the business has evolved the chocolates and production have moved into the larger facility at 132 Leura Mall.
Having began her formal chocolate training at the Savour Chocolate and Patisserie School in Australia, Jodie has continued to grow professionally through training and travel experiences worldwide, having participated in training in Paris at Lenotre, Cordon Bleu and the Ritz, visiting the Professional Salon du Chocolat in 2007, 2009 and 2011, and studying at the Callebaut chocolate academy in Chicago. Jodie has also spent considerable time in cacao plantations all over the world, with an aim to get to the source, and understand the raw product in its natural state. Jodie shares some of these experiences in the menu item ‘Chocolate Travels’.
Josophan’s commitment to quality has been rewarded through many professional awards, notably winning Champion Chocolate Exhibit at the Sydney Royal show in 2006 and 2008, and winning the Australian Chocolate Dessert Competition in 2009, where Jodie won a paid trip to her choice of chocolate academies worldwide for further training.
As Josophan’s has grown, a team of professionals working behind the scenes handcrafting beautiful products now supports Jodie. Chocolate production is headed by Nick H. with David, Carole, Jason, Natalie and Careen working tirelessly to create Josophan’s Fine Chocolates.
